With its iconic over-water villas, surrounded by the shimmering turquoise waters of a private lagoon, Soneva Jani in the Noonu Atoll has long epitomised the Maldives’ ideal. Soneva Jani was already home to a selection of exceptional dining destinations – including the So Engaging chef’s table, So Starstruck at the over-water observatory and the Crab Shack, named the World’s Most Romantic Restaurant by CNN. Chapter Two added three exciting new culinary concepts to the mix. At Overseas by Mathias Dahlgren, the casual take on fine dining is inspired by its stunning lagoon setting. The menu from the Bocuse d’Or-winning, Michelin-starred chef focuses on plant-based and pescatarian dishes, with produce freshly picked from Soneva Jani’s organic island gardens, or sustainably caught by local fishermen. The fully plant-based, mostly raw menu at So Wild by Diana Von Cranach is as healthy as it is delicious – the raw food guru took inspiration from the flavours of Indonesia’s Spice Islands and South East Asia. And So Primitive takes cooking back to its roots – at this toes-in-the-sand beachside dining destination, meats, seafood and vegetables are seared and sizzled to perfection over the hot coals of the central fire pit.
